Ms Clara A.Ibihya is a founder and Managing Director of Claphijo Enterprise Ltd registered 2002 pioneering in the dehydration of fruits and vegetables,Tanzania is blessed with fruits and vegetables,most of produce find market to the urban areas ,however during peak season prices drops tremendously or don't get market at all,thus resulting in post harvest loses.The abundance of produce made me think how to utilize the opportunity and remembering my child hood observing my mother sun drying vegetables and stored for off season usage,hence the idea hatched. The solar drying mechanism is a simple and low cost technology easily made by local and rural technicians,it is environmentally friendly technology giving employment to the rural society.The process ensures that most of the nutritional goodness is preserved.Fruits dried;mangoes,pineapple,banana,jack fruits,papaya and tomatoes.Vegetables;leaves of cassava,pumpkin.Claphijo is determined to take Tanzania globally with the dried fruits.
