I hold a Bachelor of Technology (BTech) degree in Food Science and a Master of Science (MSc) Degree in Food Technology. I am currently undertaking a PhD degree program in Food Technology with specialization in product development. I am carrying out research on production of precooked meal from quality protein maize, soybean protein concentrate and cassava starch. I have particular interest in the utilization of locally available raw food materials and improving the nutrition of children and women. I am an Assistant Lecturer in the Department of Food Science and Technology of Wesley University of Science and Technology, Ondo, Nigeria.
